Tuna – An Insider’s View

So we know you’ve eaten sushi, maybe even purchased a
special knife to slice up a little sashimi at home but
what do you really know about the fascinating world of
Maguro – the ubiquitous tuna of Japan? Our speaker in
November is Alistair Douglas, one of three non-Japanese
involved in the importation of tuna into Japan to supply
Tokyo’s Tsukiji and other fish markets around the
country. He'll fill us in on all the details you’ve
always wanted to know!
We’ll hear about the biology and physiology of tuna, how
it’s caught and sold and how to pick the best maguro for
your table as well as the economic and environmental
issues arising from the current worldwide demand for
this popular delicacy. Considering that a tuna can weigh
as much as four and a half sumo wrestlers, can be longer
than a 6 tatami mat room and needs to travel at one body
length each second just to breath, you can see we’ve got
a lot to learn! |

Dr. Douglas holds a BA in Language and a BSc in Marine
Biology from James Cook University, and an Honours
degree and PhD in Biological Sciences from Flinders
University in Australia. After deferring his studies for
a year he first came to Japan in 1993 where he worked in
a small company near Lake Biwa. Intrigued by Japan he
later returned to study at Hokkaido University of
Education, and later, at the Tokyo University of
Fisheries to do some of his PhD research on tuna at the
Tsukiji fish market.
In 2007 he set up Seafood Services Japan which imports
fresh, sustainably sourced Minami Maguro (Southern
Bluefin Tuna) to sell all around Japan. He also has sold
tuna to the UK, Singapore, Hong Kong and the United
States. Dr. Douglas spends numerous months a year
traveling around the world supervising various aspects
of his
business but luckily for us he will be back in Japan
this November. We hope you can join us for this rare
